Shakshuka with Grilled Halloumi

Shakshuka is the perfect breakfast/brunch dish. The creamy tomato sauce and the runny egg makes the perfect comforting dish. I like to add halloumi to my shakshuka. Halloumi has a high melting point. When you grill the halloumi it creates a wonderful texture that melts the cheese and makes it gooey yet hard.

Ingredients:


1/2 can fire-roasted tomatoes

2 tbsp tomato paste

2 eggs

1/2 small red onion, chopped

1-2 cloves garlic

1/2 tbsp olive oil

Pinch salt and peper

Parsley, chopped (for garnish)

Halloumi cheese



Halloumi Steps:


1. Cut your desired amount of halloumi into cubes.

2. On medium heat add olive oil and halloumi.

3. Sear on each side for 1-2 minutes (until golden brown).




Steps:


1. In a small pan on medium heat and add olive oil and sauté the onion until soft.

2. Add garlic and cook for 2 minutes.

3. Add the tomatoes, tomato paste & S&P and cook until starts to simmer.

4. Turn the heat on low and add your two eggs.

5. Cover the pan for about 5-7 minutes (depends on how cooked you want your eggs).

6. Turn off the stove, add chopped parsley and halloumi.
