Loaded with flavour! You'd never know these muffins are made with vegetables. They're the perfect breakfast, snack or even dessert. Chocolate makes everything better.

Ingredients:
Makes 12 muffins
1 3/4 cups whole wheat flour
3/4 cup unsweetened applesauce
3/4 cup almond milk
1/2 cup brown sugar

1/2 cup chocolate chips
1/4 cup + 2 tbs cocoa powder
2 zucchinis (grated and strained)
2 eggs
2 tsp baking powder
1 tsp vanilla
1/4 tsp salt
Steps:
Preheat oven to 350F. Line/grease a muffins tin for 12 muffins. Non-stick liners work best.
Combine flour, cocoa powder, baking powder and salt in a medium bowl and set aside.
In a large bowl, combine eggs, brown sugar, vanilla, applesauce, almond milk and zucchini.
Slowly add dry ingredients to wet ingredients and then mix in chocolate chips.
Scoop into greased/lined muffin tin.
Top each muffin with a few (aka a lot) more chocolate chips.
Bake for approx. 20 mins.
Remove from oven and allow to cool in the muffin tin for 10-15 minutes.
