Do you love apple crumble? Do you love muffins? Lucky for you, we've created the perfect apple crumble muffin recipe that you'll fall in love with.

Muffin ingredients:
Makes 6 muffins
1 cup flour (plus an extra tbs to coat apples)
1 cup diced apples
1 egg
1/2 cup sugar
1/2 cup buttermilk
1/4 cup butter, melted
3/4 tsp baking powder
3/4 tsp cinnamon (plus a bit extra to toss apples)
1/2 tsp baking soda
1/2 vanilla
Pinch of salt
Crumble ingredients:
1/4 cup oats
2 tbs brown sugar
2 tbs butter, softened
1tsp flour
1/2 tsp cinnamon
Steps:
Preheat oven to 425F and line/grease a muffin tin with 6 liners. Set aside.
In a small bowl, prepare the crumble topping by combining all of the listed strudel ingredients. Set aside for later.
Dice up 1 cup worth of apples (1-2 apples) and toss with some flour and cinnamon to coat. Set aside.
In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon and salt. Set aside.
In a large bowl, combine melted butter and sugar using a handheld or stand mixer.
Add in buttermilk, eggs and vanilla.
Add in dry ingredients and mix just enough to incorporate.
Gently fold the apples into the batter. Do not over-mix!
Scoop approx. 1/4 cup batter into each liner and top with the prepared crumble.
Bake the muffins for 5 minutes at 425F, then lower the oven to 350 and bank for another 25 minutes. Do not open the oven door at all while baking to ensure the muffins rise perfectly!
Once perfectly golden , remove from the oven and allow to cool for 15-20 minutes.
